Ingredients
- 1 medium mango, semi ripe, cut into thin strips
- 100g mange tout, cut into thin strips
- ¼ red pepper, cut into thin strips
- Crushed, roasted peanuts.
- Fresh coriander leaves
- 3 teaspoons Red Habanero & Juniper Berry chilli jam
- 2 teaspoons Light soy sauce
- 2 tablespoons Lime juice
- 1 teaspoon minced garlic
- 1 red chilli finely chopped, plus few rings for garnish  
Method
- Mix mango, mange tout, red pepper and a few coriander leaves in a bowl.
- Make dressing with red chilli jam,garlic,  light soy sauce, red chilli and lime juice, taste and make to your taste.
- Drizzle over the mango mix, plate, sprinkle peanuts and garnish with a few coriander leaves.
