Ingredients
- 2 corn on cob
- 2 tablespoons oil
- 3 tablespoons chilli jam
- Salt & pepper to taste
- To serve
- Lime
- Fresh coriander
- Butter
Method
- Mix the oil, chilli jam, salt & pepper in a small bowl.
- Pull out the outer husks, making sure some of the inner ones remain attached.
- Remove the thin strands of silk from each.
- Brush chilli jam mixture all over the corn and then cover with the inner husks.
- Either place on BBQ or griddle pan, turning until cooked all over. This should take about 5-7 minutes on a high heat.
- Remove husks, serve with knob of butter, lime wedge and sprinkle with chopped coriander.
